Adding VEGAN Meal Preps to My MS Lifestyle



So I’ve made the conscious decision to try going vegan. I’m not diving right into a vegan lifestyle just yet but I am “testing the waters” and “getting my toes wet” by trying out different vegan foods. I’m still doing my research but what I’ve found so far has been great. I took a trip to Trader Joe’s and got $75 worth of different vegan products. Nonetheless, I’ll explain what all I have in this meal prep you see before you.



Before I begin, I’d like to point out the fact that with a couple of the sides I used this vegan butter I found. Miyoko’s Creamery vegan butter. They have different kinds but I used this one specifically because I honestly prefer my butter salted. #PersonalOpinion 😅



1. The bottom of this meal prep has a serving of TJ’s organic brown rice. It comes in a box with three microwaveable packages. and the icing on the cake is the fact that it only takes 3 MINUTES! Once it was done I just pulled it out and seasoned it with my favorite simple rice seasoning mix which consists of lemon pepper and Lawery’s seasoning salt.



2. I also made some organic green beans as my vegetable side. I honestly love TJ’s green beans. They’re frozen but after cooking them, they taste fresh as if they came straight from the vine to your kitchen. These too are in a microwaveable bag so I just about basically handled them the same way I did the rice except I only used the vegan butter and lemon pepper To season them.




3. I tried my hand at making some sweet potato fries for the first time EVER and they actually came out pretty good. I tried following this recipe I seen on tasty but I seasoned my fries with a powdere ranch seasoning and lemon pepper mix. I used lemon pepper a lot in this meal 😅 but nonetheless it came out great.






4. Last but not least, the star of the show was these delicious chicken-less mandarin orange morsels! To make these I spread them out on my baking sheet next to my sweet potato fries and baked them. 9 minutes per each side. Once they were a nice crispy golden brown, I placed them in a bowl and tossed them in the sauce that came in a packet with the morsels. Then WAH-LA! My meal prep was finished. These morsels taste like actual white meat chicken, for sure! The sauce paired with it nicely as well.

Altogether it only took me about 20 minutes to make this and the results are beyond delicious! I definitely plan to make this again and I highly recommend trying this for yourself.
